Mmmmm. . . . . Squash

When I know it's just gonna be Ella and I for dinner I immediately gravitate to squash. Not only are they full of antioxidants, vitamin C, and fiber but Ella loves them almost as much as I do! And with so many varieties out there, just grab whatever looks good at your local supermarket, cut it in half, and remove the seeds, and pop it in the oven flesh side down for 1 hour at  400°! Voila.
