Kale!

Kale has gotten such a bad rap. And after i bought some and tried to make a salad with it, I can kinda see why. It was heavy, chewy, and bitter. It took me 2 hours (and way too much dressing) to finish it.  When I finally did I promised myself to find ways to enjoy eating this superfood. And I did! Kale is a great source of fiber and vitamin K.  It's high in antioxidants, aids in lowering cholesterol, and has nutrients that help prevent cancer!  

My First (and favorite) Kale Smoothie

2 stalks of kale – torn into small pieces 1 medium banana ½ cup plain yogurt – I tried using nosa (a yogurt made here in Colorado) and thought it was delicious ½ cup frozen berries or other fruit 1 tsp chia seeds 1 tsp vanilla 1 tsp honey   Method: Put all ingredients into blender and blend until smooth. Top with fresh fruit for more texture.
