Game Day Chicken Enchilada Dip

The best part about this dip (other than its fabulous) is that it is easy to prepare and fairly healthy (compared to its game day competitors)!

Its also easy to double (or triple!) the recipe depending on how many mouths you're feeding!

Ingredients:
  • 1 Chicken breast cooked and finely shredded
  • 1/2 8-oz can diced green chiles
  • 1 15-oz can of black beans drained and rinsed
  • 1 16-oz can red enchilada sauce
  • 1/2 sweet onion (minced)
  • 1 cup shredded mexican cheese
  • 1/4 cup chopped green onion (to garnish)
To Prepare:
  1. Pre heat oven to 375 degrees.
  2. In large bowl mix together chicken, chiles, enchilada sauce, and onion.
  3. Transfer mixture into COATED 8x8 baking dish (or bread loaf pan).
  4. Spread blacks beans over chicken mixture and top with shredded cheese.
  5. Bake for 20 minutes and top with green onions.
  6. Serve warm with chips or veggies or both!
