It only takes a minute to take a container of pre-made pesto and turn it into healthier, creamier, kid friendly sauce! Plus, I'm able to increase the nutritional value by "sneaking" in veggies that my daughter would otherwise never eat. Milk is a great source of calcium and the spinach provides nearly half of her daily need for iron. Easy to freeze and great when reheated!Ingredients:
- 2 Tbsp pre-made (store-bought) traditional basil pesto
- 1 cup almond milk
- 3 cups fresh spinach
- fresh parmesan cheese for serving (optional)
To Prepare: Combine ingredients into food processor and pulse on high for 30 seconds or until well blended.
