Simple. Healthy. Chicken Cacciatore.


This was the best! And so easy!

IMG_7093Ingredients: 2 large chicken breasts (cut in half lengthwise) 1 green pepper 1 red pepper 8 oz mushrooms quartered 1 medium sweet onion roughly chopped 2 tbsp minced garlic 2 cans diced (or stewed) tomatoes with juice Assembly: 1. Pre-heat oven to 375 degrees. 2. Place chicken strips in coated 8x8 pan. 3. Layer onion, garlic, peppers and mushrooms on top of chicken. 4. Top with both cans of tomatoes (juice too!). 5. Baked uncovered for 1 hour our until most of liquid is absorbed. If absorbed too quickly cover loosely with foil. 6. Cool for 15 minutes and serve with pasta, rice, or in soft tortillas! IMG_7094   IMG_7096   IMG_7100   IMG_7548   IMG_7545 *Also great when made in the slow cooker. *To make this toddler friendly simply remove onions from finished dish and dice for small hands to pick up.
