Quinoa Stuffed Acorn Squash

   I love squash season!  Not only are they super versatile and easy to prepare, but they're also full of fiber, vitamins, and antioxidants.  To mix things up try adding sauteed mushrooms in with the quinoa or crumbling goat cheese on top!


  • 1 acorn squash

    Got a cold? Acorn squash is an excellent source of anti inflammatory nutrients and  (immune boosting) Vitamin A!

  • 1/2 sweet onion
  • 1/2 cup diced carrots
  • 1/4 cup crasins
  • 1 cup roughly chopped spinach
  • 1 TBSP olive oil
  • 1 cup cooked quinoa

To Make:

  1. Pre-heat oven to 400 degrees.
  2. Cut squash in half lengthwise. Scrape out seeds and coat with 1/2 TBSP olive oil. Place squash face down in coated baking dish as bake for 45 minutes.
  3. Dice onion and carrot and lightly saute in 1/2 TBSP olive oil 3-4 minutes. Add spinach, crasins, and quinoa and continue to sauteed on low heat until spinach is cooked.
  4. Fill squash with mixture and top with goat cheese. Serve immediately and enjoy!
