Summer Salads

Quick, Easy, Healthy, and Yummy - Dinner Doesn't Get Much Better Than This!

summer saladsSummer weather allows for some amazing produce and at wallet friendly prices. Couple that with their ability to fill you up with minimal calories and you automatically have a winning combination.  Another reason I love these salads are their versatility.  Many can be tossed with pasta or diced chicken and voila! A complete (family friendly) meal in minutes. So treat your family (and yourself!) so some simple awesome meals.   DSC_0549Spinach Tomato Pesto Ingredients:
  • 2 cups shredded spinach
  • 1 cup grape tomatoes quartered
  • 1/2 onion diced
  • 1/2 red pepper diced
  • 1/4 cup shredded mozzarella
  • 1 Tbsp coconut oil
  • 2 Tbsp store-bought or pre-made pesto
To Make:
  1.  In saucepan heat oil over medium heat.
  2. Add tomatoes, red peppers, onion and pesto. Cover and let simmer 7-8 minutes.
  3. Uncover and remove from heat. Let stand 2-3 minutes and top with shredded cheese.
Wanna take this recipe a step further? - For an awesome fritatta simply add 3 beaten eggs to skillet before cheese and broil until eggs are cooked. - For quiche pour mixture into pre-made pie crust.  combine eggs with 1/2 cup milk in small bowl and pour over mixture. Top with additional cheese if desired. Cook uncovered at 350 until eggs and crust are cooked thoroughly. - Toss with pasta, rice, or quinoa for a complete and family friendly meal!   DSC_17121 (2)Go Green Ingredients:
  • 1 head of romaine shredded
  • 1/2 cup sweet peas (I grab a handful from our Costco-sized bag)
  • 1/2 cup chopped green onions
  • 1/2 cup chopped broccoli
If desired add 1 cup diced chicken or baked tofu Preparation: Combine all ingredients in large serving bowl and refrigerate until ready to eat!   Greek Pepper Salad Ingredients:
  • 1 head of romaine lettuce
  • 1/2 red pepper diced
  • 1 yellow pepper diced
  • 1/2 sweet onion diced
  • 8-10 grape tomatoes halved
  • 1/2 cup crumbled feta cheese
Preparation: Combine all ingredients in large serving bowl and refrigerate until ready to eat!
