Twice Baked Sweet Potatoes

Twice Baked Sweet PotatoesThis dish is simple, delicious, and packed with veggies.

Sweet potatoes are full of valuable vitamins and carry loads of iron necessary for sustained energy.  They are also high in magnesium, a mineral that aids in relaxation and proper nerve function.

Ingredients: 2 large sweet potatoes 1/4 cup sun-dried tomatoes - diced 1/2 of an onion - diced 1/4 cup diced mushrooms 1 T dried basil 1 T Italian seasoning 1 C shredded mozzarella To Make: 1. Cook potatoes in oven (wrapped in aluminum foil)or microwave (wrapped in plastic wrap) until tender. 2. Cut potatoes in half lengthwise and scoop out flesh. 3. In mixing bowl combine all remaining ingredients. 4. Fill sweet potatoes shells with mixture and top with any additional cheese. 5. Bake at 350 for 15 minutes or until cheese is melted.
