Baby's First Chicken Salad

My toddler is loving this dish! 

The cool temperature is soothing to her teething gums and the addition of apples pack an extra punch of fiber. Diced raisins also offer a subtle sweetness making it appealing to little bellies.
I know what your thinking. Where are the carbs, the starch, the bread? Well, there isn't any in this dish. And I did that on purpose.
It seems that my toddler is always snacking on empty carbs. Pretzels for long car rides. Crackers for teething. Pasta for any meal when nothing else will do.  I needed to find healthy dish (that she'd like to eat) for balance.

Baby's First Chicken Salad

  • 1 Cooked Chicken Breast – finely diced
  • 1 Tbsp diced celery
  • 1 small apple – skinned and finely diced
  • ¼ cup raisins – chopped if easier for your little one to eat
  • ½ cup plain yogurt  (NOT fat-free – our little ones need the fat!)
To Prepare: 
  1. Stir all ingredients together in mixing bowl until thoroughly combined. Refrigerate for 1 hour. (This gives the salad a chance to set and the raisins to soften)
  2. Serve a la carte (great dish to practice using a fork!) or stuff mixture into halved mini pitas (as seen below).
