Turkey Mac with “Hidden” Veggies

My picky eater is a happy girl!

This turned out so good I had to keep it away from the grownups!  Next time I will double the batch so that Mommy and Daddy can have some for dinner too.  🙂

  Ingredients:
  • 1 box elbow macaroni (cooked)
  • 1 lb ground turkey
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup minced carrot (cooked)
  • 1/2 onion - chopped
  • 1/4 cup grated Parmesan
  • 1 cup shredded cheese (I used a Mexican blend)
  • 1/4 cup ketchup
  • 1/2 cup milk (I like using unsweetened almond milk)
  To Make:
  1. In a large pan saute carrot and onion over medium low heat for 5 minutes.
  2. Add ground turkey and spices and continue to saute until browned.
  3. Once browned remove from heat and slowly add pasta, milk, ketchup, and cheese and gently toss until combined.
  4. Let stand 5-6 minutes or until cheese is melted and milk is absorbed.
